We come with another fresh summer salad for you, this time featuring cauliflower couscous. Top it with tomatoes and red onions as our Executive Chef Andy does it here or add some meat, halloumi or tofu. Perfect as a side dish for your BBQs or for those days you don't feel like cooking and you need something quick.
Cauliflower Couscous Salad Recipe
Easiest side dish
Serves 2 - Doddle - 5 minutes
Ingredients
300g cauliflower, cored,broken into florets
15g red onions chopped
Fresh basil
3-5 cherry tomatoes
0.5 tablespoons of extra virgin olive oil
0.5 tablespoons of tomato ketchup
A pinch of smoked paprika
Salt and pepper
Method
1. Place cauliflower florets in a food processor until the cauliflower resembles couscous texture.
2. Transfer the cauliflower to a bowl (You can also heat this in the microwave for 2-3mins and have it hot), add all the salad ingredients and mix them all together.
3. Drizzle the dressing over the salad and toss to combine.
